Wild Rice Chicken Salad

This Summertime, meal-in-one Wild Rice Chicken Salad can be eaten as a simple lunch or light dinner.  It is also great for family picnics or potlucks.

The combination of the wild rice, the veggies and the chicken with the Saigon dressing gives a slight hint of the Orient to this dish.

Collect the necessary recipe ingredients for this Wild Rice Salad.

Wild Rice Chicken Recipe Ingredients:

  • 1 pkg. wild rice with herbs
  • 1 can corn kernels
  • 1/2 green pepper
  • 1 bunch green onions
  • 1/2 package grape tomatoes OR 1 medium tomato
  • 1 cup (240 ml) cooked chopped chicken
  • 1/2 cup (120 ml) Saigon Dressing


Cook the rice as directed on the package.

Drain the can of corn.

Place these both into a medium sized bowl.

NOTE: the rice can be cooked the day before.


Dice up the sweet pepper.

Add the sweet peppers to the Wild Rice Chicken Recipe bowl.


Cut the grape tomatoes in half or if using a whole tomato - dice it up.

Add these to the wild rice chicken recipe bowl.


For this particular recipe, we are only going to use the white parts of the green onions. Save the green parts for another salad.

Slice up the whites fairly thinly.


Add the sliced oinions to the wild rice chicken recipe bowl.


Cut up the cooked chicken into small pieces and add the chicken pieces to the wild rice chicken recipe bowl.


Prepare the Saigon Dressing - shake well and add to the recipe bowl.


Stir well to combine all the wild rice chicken recipe ingredients.

Serve immediately or cover and refrigerate.

Recipe Yield: this salad recipe for Wild Rice with chicken serves 4 as a meal or 8 as a side dish.
