The rum soaked raisins in this creamy Rum Raisins Rice Pudding really give this dessert a boost.

Did you know that rum soaked raisins are supposed to help ward off the inflammation associated with arthritis?

The addition of the optional coconut to the mixture makes it even thicker and heartier.




Collect all the ingredients for this rum soaked raisins rice pudding.

You will also need a medium sized sauce pan and a small jar to soak the raisins.

Rum Raisin Pudding Ingredients:

  • 1 cup (240 ml) raisins
  • 4 tbsp (60 ml) dark rum
  • 1 cup (240 ml) arborio rice
  • 2 cups (500 ml) milk
  • 1 cup (240 ml) coconut milk OR just increase the milk to 3 cups (740 ml)
  • 1/2 cup (120 ml) sugar
  • 1 cup (240 ml) unsweetened shredded coconut (optional)
  • 8 dashes of cinnamon (optional)



Place the raisins in a small mason jar and pour the rum over them. Seal and then let sit. Shake every now & then.


For the rice pudding - in a medium sized saucepan put the sugar, milk, coconut milk, and rice.

Bring to a boil and then stirring often, cook until thick.


To tell if the rice is done - taste test - by sampling a bit - be careful - it is very hot.

If the rice is still hard - not done yet.


Once the rice is soft and the mixture has a thick pudding consistency - remove the pan from the heat.


Add the rum soaked raisins.


Add the coconut after the raisins.


Stir to blend the coconut and raisins into the creamy rice pudding mixture.


Serve your rice pudding with rum raisins in parfait (wine) glasses or bowls. Top with a few dashes of cinnamon.

It can be served right away or refrigerated for later.
