Prepare Sweet Potatoes
for Salads

To properly prepare sweet potatoes for salads is crucial if you want them to retain their shape and some texture.

Sweet potatoes make great potato salads if you know how to prepare them.

Over- cooking sweet potatoes will yield really soft pieces that will turn to mush in a salad.

To prepare the sweet potatoes to cook  - first use a paring knife and peel the sweet potatoes. Rinse and dry them with paper towels.

Trim off the tough ends and discard (about 1/4").

Slice 1/2" slices off the sweet potatoes and cut these into smaller chunks.

Place all the chunks of sweet potatoes into a pot and just cover with cold water.

Bring the pot to a boil over medium-high heat.

Meanwhile, you can begin to prepare the other salad ingredients and dressing.

Allow the sweet potatoes to boil for about 5 minutes, then test with the tip of a sharp knife.

When the pieces fall off easily - the sweet potatoes are done.

Immediately, dump them into a colander and run cold water over them to stop any further cooking process.

Allow to drain.

Cut the chunks of sweet potatoes into smaller bite sized pieces and you are ready to prepare your salad.

TIP: Add the dressing to the sweet potatoes while they are still warm, so that they absorb the flavour.
