Pomegranate Pear Salad Recipe

This Pomegranate Pear Salad Recipe is very deceiving because it looks difficult and classy BUT it is really an easy and simple salad recipe to prepare.






By using prepackaged Spring Mix salad greens, you save a lot of time in washing and drying the lettuce leaves. You can even buy pomegranate seeds that are all ready to use - saving a lot more time from peeling and seeding a pomegranate.

The dressing is a simple creamy blue cheese dressing. The blue cheese and the pear combination is what really makes this salad stand out.


Recipe for Pomegranate Pear Salad

Pomegranate Pear Recipe Ingredients:

• 4 cups (1000 ml) Spring Mix

• 4 pears – peeled, cored & thinly sliced

• 4 tbsp (60 ml) walnuts – finely chopped

• 4 tbsp (60 ml) pomegranate seeds

Pomegranate Pear Recipe Dressing Ingredients:

• 1/4 cup (60 ml) real mayonnaise

• 1/4 cup (60 ml) plain yogurt (low fat can be used)

• 1/4 cup (60 ml) sour cream

• 1 tbsp.(15 ml) lemon juice or cider vinegar

• 1 clove garlic - minced

• 4 oz. (120 ml) blue cheese - crumbled

• black pepper to taste






Method:

1. To prepare the dressing, in a medium-size bowl, whisk together the yogurt, sour cream, mayonnaise, lemon juice/vinegar, and garlic until smooth. Crumble in the blue cheese and mix well. Taste test and adjust seasoning. Set aside.

2. In a large bowl, combine the Spring mix, pear slices, walnuts and pomegranate seeds. Toss to combine.

3. Add the dressing and toss again.

4. Serve your Pomegranate Pear Salad Recipe creation.

Pomegranate Pear Recipe Notes:

1. If using your own dressing/vinaigrette, I would recommend adding some crumbled blue cheese to the salad as well. The flavour of the blue cheese goes very well with the pears.

2. Other types of nuts can be substituted for the walnuts OR they can be omitted altogether.
