Mushroom Bean Salad Recipe

This Mushroom Bean Salad Recipe has only 4 ingredients for a quick vegetable salad anytime - but it is best in summer when the mushrooms and green beans are fresh from the garden.

Mushrooms and beans are both really good for you. They contain lots of vitamins and minerals for the healthy development and maintenance of our bodies. A Mushroom also contains niacin - one of the few vegetables that do.

This combination, along with some onions and the creamy, cheesy dressing creates a very palatable salad.

This mushroom and bean recipe is mild enough that it can be used as an accompaniment to any meal.







Recipe for Mushroom Bean Salad

Ingredients:

  • 1 cup (240 ml) blanched mushrooms (or raw if you prefer)
  • 1 cup (240 ml) blanched green beans (or raw if you prefer)
  • 1/2 cup (120 ml) diced onion
  • 1/2 cup (120 ml) Creamy Blue Cheese Dressing


Method:

  1. Wash, slice and blanch mushrooms. Cool immediately
  2. Wash, cut and blanch beans. Cool immediately
  3. Prepare dressing while vegetables are cooling.
  4. Put mushroom slices, bean cuts, diced onions and dressing in a medium sized bowl. Mix well to coat all vegetables with dressing.
  5. Cover and refrigerate until served.
  6. Store any unused dressing in a tightly sealed jar, in the refrigerator.

Yield: serves 4


Notes:

  1. You can use the microwave to blanch the vegetables, to save time.
  2. Immediately after blanching, rinse the vegetables under cold running water to stop further cooking.
  3. You can substitute yellow bean or wax bean for the green bean.
  4. Any type of mushroom can be used in this mushroom bean salad recipe, such as: white mushroom, cremini mushroom, portebello mushroom, or shitake mushroom.
  5. If you are not partial to Creamy Blue Cheese Dressing, you can substitute Italian, Ranch or a Creamy Vinaigrette
