Leek Bacon Salad Recipe
A perfect Spring Salad

A fresh spring leek and crisp bacon combine well in this Leek Bacon Salad Recipe. The vinaigrette blends the flavours of the mild onion and the smokey bacon together perfectly.

This recipe is better if made ahead and refrigerated overnight.

Gather up the recipe ingredients and the necessary tools.

Recipe Ingredients:

  • 2 leeks
  • 2 strips of cooked bacon
  • 1 tbsp (15 ml) olive oil
  • 2 tbsp (30 ml) balsamic vinegar
  • 1 tsp (5 ml) dried thyme
  • 1 tsp (5 ml) powdered mustard

Trim the tops (green parts) and butt, off the leeks and discard.

Cut the leeks in half, and slice thinly.

Separate the leek slices and wash in a tub of water.

Scoop them out with a slotted spoon and allow to drain.

Place drained leek pieces in a medium sized bowl.

Dice up the cooked bacon.

Add the diced bacon, to the leek pieces in the bowl and add the thyme.

Prepare the vinaigrette by placing the dressing ingredients in a small jar and shaking vigorously.

Add the vinaigrette to the leek pieces and bacon. Stir to combine.

Serve immediately or cover and refrigerate.

Recipe Yield: This Leek Bacon Salad serves 4 as a side dish.
