Kohlrabi Carrot Salad Recipe

The matchstick pieces of kohlrabi and carrot in this Kohlrabi Carrot Salad Recipe are nice and crunchy and fresh. The unique dressing (vinaigrette) gives it an almost Oriental flavour.

The shredded mint is the perfect herb to compliment this recipe.

Gather all the kohlrabi carrot recipe ingredients together and get all the required tools ready.

Recipe Ingredients:

  • 3 small kohlrabi
  • 4 medium sized carrots
  • 2 tbsp (30 ml) mint
  • 5 tbsp (75 ml) rice vinegar
  • 3 tbsp (45 ml) sugar
  • 1 tbsp (15 ml) fish sauce
  • 2 tbsp (30 ml) sesame oil
  • salt

Peel the kohlrabi and cut into matchstick pieces.

Place them into a medium sized bowl.

Peel each carrot and cut into matchstick pieces.

Add the carrot matchsticks to the bowl.

Shred the mint.

Add the shredded mint to the bowl of kohlrabi and carrot.

De seed and core the red chili.

Dice very finely and add to the bowl.

Prepare the dressing by placing the remaining ingredients in a jar and shaking vigorously.

Pour the dressing over the salad mixture and stir well to combine.

Refrigerate, covered, for a few hours before serving. This allows the flavours to blend.

Recipe Yield: This Kohlrabi Carrot salad serves 4.
