Choose a firm head of radicchio with as few dark outer leaves as possible.
Remove the outer leaf and discard it.
Using your knife, remove the core from the radicchio.
Hold the head of radicchio, core side up, under cold running water. This will flush any dirt out from between the leaves.
Allow the radicchio to drain a bit prior to cutting.
Dry off the outer leaves with a paper towel.
Using your knife, slice downward through the center, creating 2 halves.
Place one half, cut side down, on your cutting board.
Now we are ready to begin to shred.
With your knife, slice very thin strips across the radicchio.
