Fennel Mint Salad Recipe
Refreshing and Flavourful

This fennel mint salad recipe is both refreshing and enticing. The slight licorice flavour pairs well with the mild onion and mint.

This fennel salad can be served as an appetizer or as a side dish with any type of meal.

With only 6 ingredients, this fennel mint salad can be prepared quickly and easily.


Recipe Ingredients:

  • 1 Fennel (anise) bulb
  • 1/2 red onion
  • 6 sprigs of mint or mint paste
  • 1 tbsp (15 ml) lemon juice
  • 2 tbsp (30 ml) Olive oil
  • salt to taste



Prepare the fennel according to these instructions


Place the washed and dried fennel pieces in a medium sized bowl.


Finely slice 1/2 of a medium sized red onion.

Add to the fennel.


Finely shred the mint leaves - click here for a picture tutorial on how to shred mint leaves.

Alternatively, you can use 2 tsp of mint paste.

Add to the fennel and onions.


Add the lemon juice.


Add the olive oil.



Stir to blend everything together - taste test and add salt to your preference.

Recipe Yield: This fennel mint salad serves 4.
