Fennel Mandarin Salad Recipe
A Sicilian Favourite

So easy to prepare, this Fennel Mandarin Salad Recipe is very tasty.

The slight licorice flavour of the crunchy shaved fennel with the sweet mandarin pieces will have everyone asking for more.

Besides a fennel bulb, there are only a few common ingredients to create this amazing salad.

Recipe Ingredients:

  • 1 bulb fennel or anise
  • 2 mandarin oranges
  • 1 tbsp (15 ml) olive oil
  • 1/2 cup (120 ml) sliced olives
  • 2 tsp (10 ml) mint paste or 2 tsp fresh shredded mint leaves
  • salt to taste

Prepare the fennel according to the picture tutorial found here.

When slicing the fennel, shave the slices off the bulb as finely as possible.

Separate the shaved pieces and place in a colander.

Rinse the fennel pieces under cold water to remove any grit from between the layers.

Allow to drain thoroughly, then place into a medium sized bowl.

Meanwhile, peel and section the mandarin oranges. If they are small - just section them right into the bowl. If they are large place the sections on a  cutting board and cut in half crosswise.

Then add the the mandarin pieces to the bowl of shaved fennel.

Add the mint paste or fresh shredded mint, the sliced olives, and olive oil.

Stir to combine all the ingredients and coat the fennel and mandarin sections with the oil.

Taste test and add salt to your preference.

Recipe Yield: This Fennel Mandarin Salad serves 4.
