Some of these Deviled Egg Recipes are from my childhood. My Mother
always made deviled eggs after Easter to use up all those eggs we had
painted.
She began experimenting with different ingredients and almost all were very tasty. So I thought I would share the best egg recipes with you.

Some of these can be quite spicy so be sure to taste test as you add spices. |

1. DO NOT use really fresh eggs - they are much harder to peel. Buy them at least a week in advance and keep them in the refrigerator until you boil them. 2. To keep the whites nice and white - hold them under cold running water as soon as they come off the stove OR put them into a dish with ice cold water. This stops any further cooking. |

3. If you wish, you can use a pastry bag and "pipe" the mixture into the egg halves. Alternatively you can snip off the end of a baggie and use that. Most people just use a common coffee spoon and press down lightly to get a rounded effect. You can also use a small melon baller to get a really round effect like on the Halloween Deviled Eggs. |
