A Cucumber-Avocado Salad?
Who would have ever thought to combine cucumbers and avocados??

Well, I for one, am glad they did - because this vegetable salad recipe is cool, refreshing and quick & easy to prepare.

A real nice change from the same old - same old simple salad recipes.

This easy salad recipe has very few ingredients - actually on 1 fruit and 1 vegetable. The rest of the ingredients are for the dressing.

How simple is that ?

A salad that even comes with it's own dressing built right in! A great idea, if you ask me - and really tasty too.



  • 1 Ripe Avocado
  • 2 green onions - diced
  • 1 tbsp (15 ml) Virgin Avocado Oil
  • 1 tbsp (15 ml) lime juice
  • 1 tbsp (15 ml) fresh coriander - chopped
  • ½ tsp (2 ml) salt & pepper
  • 1 English cucumber


1. Cut the avocado in half, dig out the pit, and spoon the flesh out of the skin onto a flat plate or cutting board.

2. Using a fork, mash the avocado slightly.

3. Stir in the green onions, avocado oil, lime juice, coriander, salt & pepper and mix it all together to make a chunky dressing.

4. Taste test the dressing - adjust seasonings to your preference

5. Dice the cucumber lengthwise and quarter-wise into bite sized chunks.

6. Toss the cucumbers with the dressing.

7. Serve immediately, garnished with more green onions and coriander, if desired.
