Creamy Shrimp Rice Salad

This Creamy Shrimp Rice Salad is great to serve company for a quick summer lunch - or just for your own indulgence anytime of year.

With minimal ingredients, this recipe is ready in no time and tastes great with just the right combination of flavours.

Collect all the necessary recipe ingredients for your Creamy Shrimp Salad, plus any tools you will need.

Creamy Shrimp Rice Recipe Ingredients:

  • 1 cup (240 ml) cooked Basmati rice
  • 1 can salad shrimp
  • 1/3 cup (80 ml) celery
  • 1/3 cup (80 ml) olives
  • 2 tbsp (60 ml) sweet pickles
  • 2 tbsp (60 ml) green onions
  • 3 tbsp (90 ml) mayonnaise

As you can see the recipe dressing ingredients are very few and all you need is a small jar to prepare it.

Creamy Shrimp Rice Dressing Ingredients:

  • 2 tbsp (30 ml) Olive oil
  • 1 1/2 tbsp (22.5 ml) vinegar
  • 2/3 tbsp (10 ml) mustard
  • 1 tsp ( 5 ml) salt
  • pepper to taste

Place the cooked rice into a medium sized bowl and break up any lumps.

Drain the can of baby shrimp and rinse with cold water to remove any excess sodium.

While the shrimp are draining - dice up the celery.

Add the celery to the recipe bowl with the rice.

Chop up the olives into little bits and add to the recipe bowl.

Dice up the pickle and add to the recipe bowl.

Dice up the green onions and add to the recipe bowl.

Now add the drained shrimp and the mayo.

Stir to combine all the ingredients into a nice creamy texture.

Prepare the dressing by placing all the dressing ingredients into a jar and shaking it.

Pour the dressing over the creamy salad.

Stir to blend the dressing with the creamy shrimp and rice salad.

Serve your Creamy Shrimp Salad  on a bed of lettuce leaves or cover and refrigerate til needed.
