Cheddar Bacon Potato Salad Recipe

This unusual Cheddar Bacon Potato Salad Recipe will have people coming back for seconds. It is very tasty and full of flavour. It is better if made at least a day ahead - so the flavours can meld together.

For a really easy salad to prepare for a larger group - this is it. The longest part is boiling and peeling the potatoes.

The flavours in this salad pair well with any BBQ'ed meat or at any potluck supper.

A truly great summer salad - even though I make it during the winter too - just to have something different.

With the cheddar cheese and bacon providing protein, this salad can be eaten as a meal, all by itself.

Cheddar Bacon Potato Salad Recipe


  • 6 medium sized potatoes - boiled, peeled and sliced
  • 1 bunch green onions - diced
  • 3 cups (750 ml) shredded cheddar cheese
  • 1 cup (250 ml) diced cooked bacon
  • 1 cup (250 ml) real mayonnaise
  • 3 tbsp (45 ml) vinegar
  • 1 tbsp (15 ml) sugar
  • salt & pepper to taste


  1. Prepare the potatoes and place into a large bowl.
  2. Prepare the other ingredients
  3. Add them to the bowl
  4. Stir gently to combine everything.
  5. Taste test - add salt & pepper to taste & adjust other seasonings to suit.
  6. Cover your Potato Salad and refrigerate until ready to serve.

Yield: serves 12


  1. You can use store bought pre-shredded cheddar cheese to save on time.
  2. You can use store bought pre-cooked bacon and just dice it or buy real bacon bits for even more time savings.
  3. To make the salad look more appealing (if taking to a potluck or family get-together) - you can garnish the top with radish slices, sweet pepper rings, or a few dashes of paprika.
  4. Different types of potatoes absorb more liquid than others, so you might need to add some water to make the creamier sauce.
  5. If using "new" potatoes, you can leave the skins on - for a further time savings.
