Brandied Citrus Fruit Salad


This Brandied Citrus Fruit Salad combines the goodness of citrus fruit with a little touch of brandy, just to spark your interest. It should also get your husband to eat more citrus fruit.






Assemble the ingredients for your brandied citrus salad and the tools you will need.

Ingredients for brandied citrus salad:

  • 1 pink grapefruit
  • 2 blood oranges
  • 3 mandarins
  • fresh mint or tube mint
  • brandy (1/3 cup 80 ml)


Method:

Before we can begin to make brandied citrus we need to prepare the citrus fruit, so that it will release it's juices. Just use the flat of your hand and roll the fruit around while applying a little pressure.

Do this with each one.



Next - you will need to rinse off the outside of all the citrus fruit, and then dry them.


Now we can begin - cut both ends off the mandarins and discard.


These are easy to peel by hand - so just peel them and drop the segments into the bowl.

Next is the blood oranges - I chose these for the colour but ordinary oranges will work too.

Trim off both ends and then lightly score, with the tip of your knife, from the top down.



Continue to score all the way around


Now you can easily remove the peel, one section at a time.


Segment the orange and cut the citrus segments in half, so that you have bite-sized pieces.


Before you score the second orange, grate off the rind of about half of the orange. Grate this directly into the bowl.

Then continue to cut, score, peel segment and cut the second orange.

Now for the grapefruit.

Cut the 2 ends off and discard.


Cut the grapefruit in half from top to bottom.


Cut each half into 4 sections.


Using your knife, remove the rind from each section.


Trim the inner pith edge off - this also removes most of the seeds.

Cut the citrus sections into bite-sized pieces and add them to the bowl.


Add 1 tsp fresh chopped mint or 1 tsp of tube mint to the citrus salad.


Add 1/3 cup (80ml) of Brandy to the citrus combo.


Stir, so that the brandy mixes well with the fruit juices.

Cover and refrigerate your brandied citrus salad for at least 3 - 4 hours for the fruit to become well brandied.


Note: Sometimes grapefruit can be quite sour - so taste test your finished product.  If it is too sour for your liking - add up to 1 tbsp of sugar and stir to combine it well with the other ingredients. This will offset the sourness.


This Brandied citrus fruit salad can be served in bowls, over ice cream, over Angel Food cake, or can be served by itself in a wine glass with a dollop of whipped cream.

Brandied citrus is also really good with vanilla yogurt.
