Blackbean Mandarin Salad with Lime Dressing

This Blackbean mandarin salad with lime dressing is a great refreshing salad to accompany any meal. A blackbean salad also great for potlucks, BBQ's, Picnics and Tailgate Parties.





Assemble all the ingredients and the tools you will need.

Ingredients:

  • I can Blackbean
  • 2 mandarin oranges
  • 1 small red onion
  • 2 tbsp (30 ml) lime juice
  • 1 tsp (5ml) cilantro
  • salt & pepper to taste





Drain the blackbean can and rinse them thoroughly- and then allow them to drain completely.


Slice the red onion very thin.

Peel and segment each mandarin.

(Alternatively, you can use canned mandarin segments - drained)


Combine the mandarin segments, drained blackbean and sliced onion in a medium size bowl.

Add the cilantro and the lime juice to the bowl with the blackbean and mandarin segments.




Stir to combine everything.

Taste test and adjust with salt & pepper to your preference.

Cover your blackbean mandarin salad and refrigerate til needed.
