Black Beans Orange Corn Salad
A Tasty & Healthy Combo

This Black Beans Orange Corn Salad is so good that no one will realize how good it actually is for you. The combination of black beans with the sweetness of the orange and corn with the tart lime dressing creates an unbeatable flavour.





Gather up all the ingredients and tools you will need to make this black beans orange and corn salad.

Ingredients:

  • 1 can black beans
  • 1 can kernel corn or the corn kernels stripped off 2 cooked corn cobs
  • 1 orange - I chose a blood orange but any type will do
  • 1 small red onion
  • lime juice
  • olive oil
  • salt & pepper
  • 1/2 cucumber (optional)





Drain the black beans and rinse them thoroughly to remove the sodium.

Drain and rinse the corn kernels also.


Thinly slice the red onion.

Score and peel the orange.

Divide the orange into segments.


Cut each orange segment in half or into bite sized pieces.

Put the black beans, the corn, the onion slices and the orange pieces into a medium sized bowl.

Add 2 tbsp (30ml) lime juice

Add 1 tbsp (15ml) olive oil



Stir to blend everything together.

Taste test and adjust the salt & pepper to your taste.
