Black Beans Grapefruit Salad

This Black Beans Grapefruit Salad has a nice mixture of sweet and tart as well as a combination of textures.

A great blend of flavours all in one dish.

Perfect to accompany any meal or healthy enough to just eat on it's own.





Gather up all the ingredients you will need, as well as the tools for the preparation.

Ingredients:

  • 1 can black beans
  • 1 grapefruit (red or white - your choice)
  • 1 small red onion
  • 1/2 English cucumber
  • Mozzarella cheese (for garnish)

Dressing:

  • 1/3 cup grapefruit juice
  • 3 tbsp chopped cilantro
  • 2 tsp honey
  • 1/4 tsp ground cumin
  • dash of black pepper





Drain the can of black beans - rinse thoroughly to remove the sodium and allow to drain completely.


Dice up the red onion.

Slice up the cucumber and then cut the slices into quarters.


To get the juice from the grapefruit, roll it around with a slight pressure from your hand. This will allow it to release it's juices.


Cut the grapefruit in half and squeeze each half over a measuring cup, until you have 1/3 cup of juice.


Cut the halves into 4 sections each.

Using a sharp small knife, cut the flesh from the rind.


Cut the center pith away from each section.

Cut the grapefruit sections into bite sized pieces.


Combine the grapefruit pieces with the black beans in a medium sized bowl.

Add the onions and cucumbers.


In a small bowl mix together the 1/3 cup grapefruit juice and honey with the rest of the dressing ingredients.


Pour the dressing over the black beans and grapefruit salad.

Garnish with small cubes of mozzarella cheese.
