Asparagus Radish Salad Recipe
with Oriental Dressing

In this Asparagus Radish Salad Recipe, the radish provides the crunch and a bit of a bite, while the blanched asparagus is quite mild.

The Oriental style dressing is quite prominent and this simple salad is best served with seafood for it to really shine.

There are really only 2 main ingredients for the salad itself - asparagus and radish.

The dressing is easy and simple to make - just measure everything into a sealable jar and shake.

Recipe Ingredients:

  • 1/2 bunch asparagus, (about 1 pound), trimmed
  • 1/2 bunch radishes, trimmed and cut into thin moon slices

Dressing Ingredients:

  • 2 tbsp (30 ml) white vinegar
  • 1 tbsp (15 ml)  soy sauce
  • 2 tsp (10 ml) canola oil
  • 1 tsp (5 ml)  sesame oil
  • 1/2 tsp (2.5 ml) minced ginger
  • 2-3 dashes Asian red chile sauce (optional)
  • 2 tbsp (30 ml) finely chopped green onion

First off, you will need to prepare the asparagus.

Once the asparagus is cut and clean - place it in a microwaveable bowl with just enough water to barely cover. Microwave on high for 3 min.

Drain into a colander and immediately run cold water over the asparagus pieces to stop the cooking process.

Place the asparagus pieces into a medium sized bowl.

Prepare the radishes by washing and thinly slicing them.

Add the radish slices to the asparagus pieces in the bowl.

Dice up the green onion to make 2 tbsp (30 ml) and put into a sealable jar or container.

Measure out the remaining dressing ingredients into the jar and shake to blend it all together.

Pour the dressing over the asparagus pieces and radish slices.

Stir to coat all the pieces with the dressing.

Serve your Asparagus Radish Salad - Enjoy.
