Apple Spinach Salad Recipe

The combination in this Apple Spinach Salad Recipe is not only easy, simple and tasty - it is also totally good for you. The amount of fiber, vitamins and minerals in this one dish are amazing.

We all know the nutritious benefits of eating apples and the health benefits from spinach were touted by none other than the famous "Popeye". So, here, in one easy and simple salad recipe you have the best of both.

The recommended Sweet Onion Vinaigrette is a very good match for the flavours of the apple and spinach.

Apple Spinach Salad


• 4 cups (1000 ml) Baby spinach

• 2 medium apples – cored and very thinly sliced

• 4 tbsp (60 ml) nuts (your choice) – chopped

• 4 tbsp (60 ml) Feta cheese – crumbled

Dressing Ingredients: OR use a Sweet Onion Vinaigrette

• 1/2 cup (120 ml) olive oil

• 1/4 cup (60 ml) balsamic vinegar

• 1/2 cup (120 ml) sweet onion (red, yellow or white) - finely diced

• pepper to taste


1. Prepare the spinach by washing & drying it. (unless using a prepackaged salad spinach) Then place it in a large bowl.

2. Prepare the remaining salad ingredients as outlined above and add them to the bowl with the spinach. Toss to combine.

3. Prepare the vinaigrette by combining all the dressing ingredients in a jar with a tight fitting lid. Shake vigorously to blend.

4. Pour the well shaken dressing over the salad and toss to coat all the salad ingredients with dressing.

5. Serve.

Yield: Serves 4


1. Slightly tart apples are best for this apple spinach recipe. Leave the peel on for enriched vitamins and for colour.

2. Any types of nuts are fine such as peanuts, walnuts, almonds, hazelnuts, pine nuts.
