Potato Salsa Salad Recipe

This Potato Salsa Salad Recipe combines two favourites together, the potato and tomato, to create a mouth watering, spicy masterpiece.

A simple salad recipe, this creation livens up a normal potato salad recipe with the spices of the salsa. The additional vegetables for the home-made salsa, makes this a nutritious dish as well as hearty.

This is one potato vegetable salad recipe that is sure to be a summer BBQ favourite.The salsa flavour in this recipe adds a certain flair to the meal.

Recipe for Potato Salsa Salad


• 2 lb (1 kg) small new red Potatoes

• 1 medium Tomato - diced

• 2 tbsp (30 ml) Green Onions - diced

• 1/2 cup (120 ml) Cucumber - diced

• 1/2 cup (120 ml) Red Pepper - diced

• 1/2 cup (120 ml) Celery - diced

• 1/3 cup (80 ml) cilantro - chopped


• 2 tbsp (30 ml) lemon juice

• 1/4 cup (60 ml) olive oil

• 1/4 tsp (1.5 ml) hot pepper flakes

• 1 garlic clove, minced

• 1/2 tsp (2.5 ml) salt

• 1/4 tsp (1.5 ml) pepper

• 1 cup (240 ml) tomato juice


1. Cook the unpeeled potatoes in large pot of boiling water until tender. Drain and immediately rinse with cold water. Set aside and allow to cool.

2. When cool enough to handle - cut each potato into 8 wedges and place into a large bowl.

3. Add the prepared salsa ingredients: tomato, green onions, cucumber, red pepper, celery, and cilantro and mix until well mixed.

2. In a container or jar with a tightly sealed lid, shake together the lemon juice, olive oil, hot pepper flakes, garlic, salt, pepper and tomato juice.

3. Pour the dressing over the potato and vegetable recipe mixture and toss to combine.

4. Keep your potato salsa salad refrigerated until ready to serve.
