You may notice that I have left out all seafood salad recipes from this picnic and tailgate recipes section. This is due to a VERY bad experience I had a few years back with a seafood salad that had been left out in the heat for too long. I wouldn’t wish that experience on my worst enemy. However, if you really want seafood salad recipes - Please be sure to keep them cold!! - you will find a number of them HERE.

Dispelling the Mayonnaise Myth

The following quote from The Association for Dressings & Sauces will dispel the myth about using mayonnaise in cold salads for picnics or tailgate parties.

It’s picnic (and tailgate) season and millions of families are packing their coolers and heading outdoors. Whether you’re ordering out or bringing the food from home, there are several important facts to remember about food safety. And, despite what your mother may have told you, mayonnaise does not increase the chances of food poisoning. In fact, commercially prepared mayonnaise actually contains ingredients that protect against bacteria. It’s homemade mayonnaise recipes using unpasteurized (raw) eggs that gave birth to the myth that mayonnaise causes food poisoning.The Association for Dressings and Sauces (ADS), United States, has collected 50 years of research that supports this claim."

Preparation of Recipes

The majority of these Picnic Tailgate Salad Recipes can be prepared a day or two in advance - which is great news and cuts down on all the items that need to be gathered for the outing. Most of these picnic and tailgate salads taste even better after being refrigerated at least over-night. This allows the flavours to blend.
