Japanese Cucumber Salad

A Japanese Cucumber Salad or Sunomono is composed of  thinly shaved cucumber and red onions in a Japanese vinaigrette.

The Japanese viniagrette is both sweet and tangy which compliments the cucumber very well.

This recipe is extremely popular in Japanese restaurants.

Collect all the recipe ingredients for your salad of Japanese Cucumber.

Japanese Cucumber Recipe Ingredients:

  • 1 English cucumber
  • 1/2 red onion

Japanese Vinaigrette Ingredients:

  • 1/3 cup (80 ml) Rice Vinegar
  • 1 tbsp (15 ml) sugar
  • 2 tsp (10 ml) soy sauce
  • 1/2 tsp (2.5 ml) ginger paste
  • pinch of salt

Prepare the cucumber by removing any plastic wrap, and by washing & drying the outer skin.

Shave the cucumber as thin as possible with either a knife, a paring knife or a mandolin.

Put the shaved cucumber into a medium sized bowl.

Dice up the red onion.

Add the onion to the Japanese salad recipe bowl.

Mix up the Japanese vinaigrette ingredients in a mason jar and shake well.

Pour the Japanese vinaigrette over the shaved cucumber and onions in the Japanese salad recipe bowl.

Stir to combine. Allow to sit at room temperature for 1/2 hour before serving or cover and refrigerate over night.
