In Spring and Summer, this Italian Field Salad Recipe, provides you with the goodness of field fresh veggies, all combined into a nice healthy salad.  Although, that doesn't mean that we can't eat this simple Italian recipe all throughout the year, just like an Italian.

This Italian salad contains a variety of field fresh vegetables to tantalize your palate.

The Sweet Onion Vinaigrette pairs well with the tartness of the radicchio & endive.

  • 2 cups (480 ml) romaine lettuce - chopped or shredded
  • 1/2 cup (120 ml) carrot - shredded
  • 1/2 cup (120 ml) radicchio - shredded
  • 1/2 cup (120 ml) endive - chopped
  • 1/2 cup (120 ml) mushrooms - sliced
  • 1/4 cup (60 ml) bacon - diced
  • pinch of fresh herbs (your choice)


1. Combine all the Italian recipe ingredients in a medium size bowl.

2. Toss gently to mix the field veggies with the lettuces.

3. Serve this Italian field salad with a Sweet Onion Vinaigrette
