Garden Salad Recipe -
Fresh from the Garden

Garden Salad Recipe - the first - fresh, fresh, green salad recipe of the season. Fresh cut from the garden - how much better can it get?

If you don't have a vegetable garden - check out your local Farmer's Markets for fresh garden produce to make this simple and easy recipe.

I know that not everyone has a vegetable garden but we are lucky that we can purchase relatively fresh produce year-round in our local grocery stores. Of course when produce is in season and we can purchase local fresh produce - that is the best time for making green salad recipes. Somehow the winter tomatoes and cucumbers just don't have the same taste as local fresh ones. However, we shouldn't complain - at least they are available to us all year. Therefore we can make simple garden salads all year round!!

Recipe for Garden Salad

• 4 cups (960 ml) washed, dried & torn green leaf lettuce

• 1 medium English cucumber - sliced

• 1/2 cup (120 ml) sweet bell pepper - diced

• 1/2 cup (120 ml)thinly sliced red onion

• 8-10 grape tomatoes or quartered small red tomatoes

Garden Salad with Chees

- thinly sliced radishes

- 1/2 cup (120 ml) grated cheddar cheese

(my son's favourite)

1. Place all recipe ingredients in a large bowl.

2. Toss to mix.

3. Add the dressing and toss gently.

4. Serve immediately.

RECIPE YIELD: Serves 4 to 6.

You can use any store bought Dressing or you can prepare your own – see French Dressing OR - one of the many others in my collection of Salad Dressing Recipes such as: Ranch Dressing, Thousand Island, Catalina

OR maybe you would prefer a light vinaigrette such as: White Wine Vinaigrette, or Sweet Onion Vinaigrette.

Try a different one every time and find your favourites.
