Truly American
Cobb Salad Recipe

This Cobb Salad Recipe was first created in the Americas by a Mr. Robert Cobb. Late one night he prepared this simple salad recipe with left-overs from his restaurant refrigerator - so the story goes.

That is what I like about this simple Cobb recipe - is that you can customize it to what you have on hand.

I used baby spinach (pre-packaged) that was already washed & dried, plus I had some left-over chicken, and a package of pre-cooked bacon that I just chopped up.

All I had to really do besides chopping and cutting was boil a few eggs to create this tasty and hearty meal.

Cobb Salad

Cobb Recipe Ingredients:

• 6 slices cooked bacon – crumbled or diced

• 3 hard boiled eggs - quartered

• 1 head iceberg lettuce - shredded

• 3 cups (720 ml) cooked chicken - cubed

• 2 tomatoes - chopped

• 3/4 cup (180 ml )blue cheese - crumbled

• 1 avocado - peeled, pitted & diced

• 3 green onions - chopped

• 1 bottle Ranch salad dressing or your favourite creamy type

1. Prepare the vegetables, eggs, bacon, cheese, chicken & avocado as outlined above.

2. Divide the shredded lettuce among 6 individual plates.

3. Roughly divide the remaining ingredients into six equal portions and arrange them in rows over top of the lettuce.

4. Drizzle with Ranch dressing or your favourite dressing.

5. Now, enjoy your Cobb salad creation.

Cobb Recipe Yield: Serves 6

Recipe Notes:

1. For a larger gathering you can double the amounts of this recipe and arrange everything on a large serving platter and let your guests help themselves to build their own salads.

2. You can substitute Mozzarella or Cheddar cheese for the Blue Cheese.

3. The avocado can be replaced with a fruit of your choice. For example you could have pineapple pieces with ham, or peaches with pork, or apples with roast beef.
