This California Salad Recipe is made with "Spring Mix" greens,
sometimes also called Mesclun Mix. This is a combination of baby lettuce
leaves with the addition of endive and radicchio, plus arugula.
I have 2 different recipe variations of a California Salad for you to try.

The bitterness of the endive and radicchio is offset by the peppery flavour of the arugula.
This mixture of flavour, colour and texture is usually just dressed with a classic vinaigrette.
The lettuces used for this recipe mix usually are any or all of the following: romaine, oak, tango, lolla rossa, red & green leaf, mizuna, arugula, tatsoi, mache, red & green chard and spinach.

CALIFORNIA 1 RECIPE INGREDIENTS
• 3 cups (720 ml) Spring Mix.
• 1/2 cup (120 ml) red onion – thinly sliced
• 8-10 grape tomatoes
• 1/3 cup (80 ml) mandarins – drained
• 1/2 cup (120 ml) craisins
• 1/4 cup (60 ml) slivered almonds (optional)
METHOD:
1. Layer all ingredients in a large bowl.
2. Toss gently to mix.
3. Add the dressing just before serving your California Salad OR allow your guests to serve themselves and then add their own dressing.
RECIPE YIELD: Serves 6.

CALIFORNIA 2 RECIPE INGREDIENTS
• 3 cups (720 ml) Spring Mix.
• 1/2 cup (120 ml) red onion – thinly sliced
• 1/3 cup (80 ml) diced red pepper
• 1/3 cup (80 ml) diced pineapple
• 1/2 cup (120 ml) raisins or craisins
• 1/4 cup (60 ml) crushed unsalted peanuts or slivered almonds
METHOD:
1. Layer all ingredients in a large bowl.
2. Toss gently to mix.
3. Add the dressing just before serving your California Recipe OR allow your guests to serve themselves and then add their own dressing.
RECIPE NOTE:
