The Classic Caesar Salad Recipe - "Three years before Caesar Cardini's death in 1956, the master chefs of the 'International Society of Epicures' in Paris proclaimed Caesar's salad as "the greatest recipe to originate from the Americas in 50 years."
There are many claims as to who invented the Caesar Salad. The one I believe to be most likely is that Caesar Cardini created this green salad recipe at a time when he was nearly out of supplies and just used what ever he had.
This is not an unusual occurrence in the restaurant business and that is exactly how many famous simple salad recipes come about.
CAESAR RECIPE INGREDIENTS:
• 3 cups (720 ml) washed, dried & cut romaine lettuce
• 1/4 cup (60 ml) Parmesan cheese - grated
• 1/4 cup (60 ml) bacon - cooked and crumbled
• 4-6 lemon wedges
• 1/2 cup (120 ml) croutons
METHOD:
1. Place the lettuce in a large bowl.
2. Sprinkle the Parmesan cheese on top.
3. Sprinkle the bacon bits and croutons over the cheese.
4. Add the dressing and toss gently.
Serve immediately with the lemon wedges alongside.
CAESAR RECIPE YIELD: Serves 4 to 6.
RECIPE NOTES:
1. The dressing wilts the lettuce very quickly therefore be sure to put it on just before serving OR allow your guests to serve themselves and then dress their own.

- that romaine is low in calories, high in vitamins and minerals.
