Broccoli-Tortellini Salad -
A Cheesy Event

This Broccoli-Tortellini Salad is a great simple vegetable salad recipe for getting kids and other people to eat their vegetables in the summer.

Summer fresh broccoli, tomatoes and red onions make the base for this Broccoli Tortellini Salad. Mix these with some cheese tortellini and a creamy dressing and you have created a mouth watering salad.

In this simple salad recipe raisins and sunflower seeds can be used to dress it up.

Broccoli Tortellini Salad Recipe


• 8 slices bacon - diced

• 20 ounces (600 ml) fresh cheese-filled tortellini

• 3 cups (720 ml) fresh broccoli florets

• 1 cup (240 ml) raisins (optional)

• 1 cup (240ml) sunflower seeds (optional)

• 1 red onion - diced

• 6-8 grape tomatoes - halved


• 1/2 cup (120 ml) mayonnaise

• 1/2 cup (120 ml) white sugar

• 2 teaspoons (10 ml) cider vinegar or lemon juice


1. Cook the bacon, in a large pan, on medium heat until browned. Drain, cool and chop. Set aside.

2. In a large pot of boiling water cook the tortellini for 10 minutes. Drain, and immediately rinse under cold running water.

3. In a large pot of boiling water blanch the broccoli florets for 2 minutes. Remove and drain. Rinse under cold water immediately to stop the cooking process and to set the colour.

3. In a small bowl, blend together the mayonnaise and sugar to a smooth consistency. Add the vinegar and whisk to combine.

4. In a large bowl, combine the blanched broccoli, the cheese tortellini, the diced bacon, raisins, sunflower seeds, chopped tomatoes and red onion.

5. Add the dressing and toss to coat all the ingredients.

6. Serve immediately or refrigerate until needed.


This recipe works equally as well with cauliflower or a mixture of 1/2 broccoli and 1/2 cauliflower.
