Black Beans and Mandarins Salad

Perfect Combination any time of Year.

The combination in this black beans and mandarins salad pairs very nicely with the feta cheese and the tart vinaigrette. This dish would be welcome anytime anywhere.




Assemble all the necessary ingredients and tools required for preparation.





Ingredients:

  • 1 can black beans
  • 2 mandarins
  • 1 small red onion
  • Cilantro
  • Garlic
  • red wine vinaigrette (see recipe here)



Drain the can of black beans - then rinse them thoroughly and allow the black beans to drain completely.


Peel and segment the mandarins.

Alternately - you can use canned mandarins - well drained.


Peel and slice the red onion very thinly.

Combine the black beans, mandarins, and onion in a medium sized bowl.

Add 1 tsp. (5ml) of minced garlic and 1 tsp. (5ml) of minced cilantro.

Toss with 2 tbsp (30ml) of red wine vinaigrette.

Taste test and adjust the salt and pepper to your preference.

Cover your black beans and mandarins combo and refrigerate til needed.

Stir before serving and garnish the top of the black beans and mandarins combo with crumbled feta cheese just before serving.
