Bean-Mango Wrap

This Bean-Mango Wrap is quick and easy to prepare. Bring this bean salad recipe to your next potluck or Barbecue. This simple salad recipe goes well with any barbecued meal.

Every summer we all look forward to those easy summer meals of barbecued foods and simple salads. But - we also need to ensure that our families are getting enough protein and vitamins from their food.

Here I have prepared a few wraps with the recipe below plus a few with some crab salad. We like variety.

Beans are a great source of vitamins and they are also protein rich.

Instead of the black beans - called for in this recipe - other types can be substituted - such as: chick peas, kidney beans, or mixed beans.

If some-one in your family doesn't like corn - canned peas or carrots can be used instead - or even a can of mixed vegetables!

Bean-Mango Wrap


  • 1 can Beans - drained & rinsed
  • 1 can Kernel corn - drained
  • 1/2 sweet yellow pepper - diced
  • 2 green onions - chopped
  • 1 mango - peeled & chopped
  • 1/4 cup (60 ml) coriander - chopped
  • 1/2 cup (120 ml) Barbecue Sauce
  • Juice of 1 lime
  • 8 Crispy lettuce wraps or large endive leaves

  • Method:

    1. Place the beans, corn, diced peppers, sliced onions, diced mango, chopped coriander, barbecue sauce and lime juice in a large bowl and mix to combine all the ingredients.

    2. Divide the bean mango salad equally among the 8 lettuce wraps.

    3. Serve immediately.


    This bean & mango salad can also be used as a buffet dish – just place the salad bowl on the table, with the lettuce wraps alongside and let people help themselves.
