Never mind a BLT Sandwich - Here is the BLT Pasta Salad

This BLT Pasta Salad incorporates our favourite BLT (bacon, lettuce, tomato) ingredients into a nice cool pasta salad recipe. A definite must try if you like bacon, lettuce and tomatoes.

Summer is hot and although we mostly all like those BLT Sandwiches - on a hot day we are looking for a cool and refreshing meal.

This easy and simple BLT salad recipe also presents well at any BBQ or family gathering, as well as being a healthy and nutritious lunch for any day of the week.

BLT and Pasta Salad Recipe

BLT Pasta Ingredients:

• 1 cup (240 ml) real mayonnaise

• 1/4 cup (60 ml) concentrated lemon juice

• 2 tsp. (10 ml) sugar

• 2 tsp. (10 ml) instant chicken bouillon

• 1 package small pasta - cooked & drained

• 10 bacon slices - cooked and chopped

• 1 large tomato - chopped or 12 grape tomatoes - halved

• 1/4 cup (60 ml) green onion, chopped

• 4 cups (960 ml) lettuce, thinly sliced


1. In a small bowl whisk together the mayonnaise, lemon juice, sugar and bouillon for the dressing. Set aside.

2. In a larger bowl, combine the pasta, bacon, green onion and tomato.

3. Add the dressing and gently mix both combinations together.

4. Mix in the lettuce just before serving OR just serve your BLT Pasta on a bed of lettuce.

BLT Pasta Yield: 16 side servings OR 8 lunch meals

BLT Pasta Salad with Cheese

For all you cheese lovers (myself included) - here is the utmost greatest Cheesy BLT Salad.

Simply add your favourite cheese (grated or cubed) to the salad with the lettuce - just before serving and toss lightly OR just use the cheese as a garnish on top.

This becomes a quick complete meal in one dish.
