Asian Rice Salad Recipe

This Asian Rice Salad Recipe creates a hearty salad from left-overs, that can be eaten as a lunch or as a side dish.

The sweet, yet tangy Asian style dressing blends the recipe ingredients together very nicely.

Recipe Ingredients:

  • 1 cup (240 ml)  cooked rice
  • 1 cup (240 ml) cubed cooked chicken
  • 1/2 cup (120 ml) corn kernels
  • 1/2 cup (120 ml) sweet peas
  • 1/2 cup (120 ml) sweet pepper
  • 2 tbsp (30 ml)  green onion
  • 1/2 cup Asian Sweet Sesame Dressing - click here for recipe

Gather up and measure out all the recipe ingredients.

The rice I used here was cooked in chicken broth for additional flavour.

Place the rice, cubed chicken, peas and corn into a medium sized bowl.

Add to bowl.

Add the Asian Sweet Sesame Dressing

Blend to mix all the Asian recipe ingredients together.

Recipe Yield: This Asian Rice Salad serves 4 as a meal or 8 as a side dish.

Recipe Notes:

1. This Asian salad is more flavourful the second day, once the dressing has had a chance to mingle with the other ingredients.

2. Different vegetables can be used such as celery, chopped snow peas, cooked broccoli.

3. The chicken can be substituted by ham, cold roast pork or even some left-over beef.
